Left Over Gobble, Gobble Fajitas

This recipe is a great way to use up your left over turkey from Thanksgiving. Gobble, Gobble!

Here’s a deliciously different recipe for leftover turkey…just give it a kick with picante sauce, peppers and onions, all wrapped up in a flour tortilla and you’ve got a tasty meal!


2 jars (12 ounces each) Slow Roast Turkey Gravy
1 cup Picante Sauce (Use Salsa if you like)
2 tablespoons vegetable oil
2 small red peppers (I use one yellow pepper for color), cut into 2-inch-long strips (about 2 cups)
2 medium onions, sliced (about 2 cups)
3 cups cooked turkey (cut into strips)
12 flour tortillas (6-inch), warmed
1 Cup of Shredded Mexican Blend Cheese
Sliced pitted ripe olives (Optional)


Stir the gravy and picante sauce in a 2-quart saucepan.

Heat the oil in a 10-inch skillet over medium heat. Add the peppers and onions and cook until they’re tender-crisp, stirring occasionally. Stir in 2 cups gravy mixture and the turkey. Reduce the heat to low. Cook until the mixture is hot and bubbling.

Spoon 1/3 cup turkey mixture down the center of each tortilla. Fold the tortillas around the filling. Heat the remaining gravy mixture over medium heat until the mixture is hot and bubbling. Serve with the filled tortillas. Garnish with olives.
