This chowder is good served with tortilla chips, crackers or bread.

2 tablespoons butter (You may use Olive Oil for a healthier Chowder)
1/4 cup onion, chopped
1/4 cup celery, chopped
1/4 cup carrots, grated
2 cups skinless and boneless chicken, chopped (I use about 3-4 chicken breasts)
1 jalapeño pepper, seeded and minced (I use an orange pepper instead-Optional)
2 tablespoons whole grain flour
3 cups 1% milk
1 1/2 cups fresh or frozen corn kernels
1 can tomatoes, dices (Optional)
1 teaspoon fresh (or 1/4 teaspoon dried) thyme
1/4 teaspoon ground red pepper (Optional)
1/8 teaspoon salt & pepper (or Greek Seasoning for taste)
1 (14 3/4 oz.) canned or frozen creamed corn


Melt butter in a large handled pan over medium heat.
Add onion, celery, carrots, chicken and pepper (if you desire) cook about 3-6 minutes or until tender
Add flour and cook for 1 minute, stirring constantly
Stir in milk, corn, tomatoes, thyme, red pepper, salt and creamed corn
Bring to a boil then reduce heat to medium and cook for about 5 minutes, stirring frequently.
