This is a quick and easy salad that’s healthy. You’ll find yourself making it over and over!

Strawberry Spinach Salad:
Chopped strawberries
Chopped sweet apple (I like Honey Crisp)
Chopped almonds(I like toasted almonds, walnuts, pecans or pine nuts…choose your favorite nut or mix them all together)
Your favorite greens for salad (I prefer spinach or spring mix, kale is tasty too and very healthy)
Blue cheese to taste (you may also choose your favorite cheese such as Feta, gorgonzola or some kind of crumble cheese)

Sweet Balsamic Dressing:
1-1/2 Tablespoons balsamic vinegar
3 Tablespoons extra virgin olive oil
1 teaspoon honey
1 teaspoon Dijon mustard
Salt & pepper, to taste (I use Greek Seasoning instead)
**I double, triple or sometimes just make a lot of extra dressing and refrigerate it for up to a week or so.

Whisk dressing ingredients in the bottom of a large salad bowl.
Add salad mix, chopped strawberries, apples and avocado.
Toss gently to coat evenly.
Sprinkle with generous handfuls of chopped pecans (or your choice of nuts) and blue cheese.
