Ingredients:

1-9 inch pie crust (pre-baked for 10 minutes)
4 large eggs
3/4 cup milk
1/2 tsp. salt
1/2 tsp pepper
1/8 tsp fresh ground nutmeg
1/2 med yellow onion
1/2 bag of fresh spinach, cooked and thoroughly drained( frozen can be used here to save time, must be squeezed almost dry)
1 8 oz pkg. mushrooms sliced (baby bella are great!)
1/2 cup fresh grated asiago cheese (parmesan can be a sub)
1 Pkg. Garlic and herb feta cheese, crumbled (Athenos)

Directions:

Cook onion until it starts to caramelize. Add mushrooms and brown. Add the drained spinach and toss to incorporate, set aside to cool.

Whisk eggs, milk, salt & pepper together, set aside.

Combine asiago and feta cheese and spinach mixture in a large bowl. Once combined put into prepared pastry. Carefully pour the milk/egg mixture, distributing evenly.

Bake at 350 for 50 minutes, or until lightly browned on top. Let set for 20 minutes till serving.
