Recipe

Ingredients:

1-12 ounce pkg. MorningStar Farms Veggie Crumbles
6-8 strips MorningStar Farms Veggie Bacon, chopped fine
1 Tablespoon Liquid Smoke
1/2 cup finely chopped onion
1/4 cup Canola Oil
1 cup soy cheese grated (Sometimes I just use Mexican Blend Grated Cheese)
4 cups Egg Beaters
Salt and pepper to taste
Non stick spray

Directions:

Spray a skillet with non-stick spray and sauté finely chopped onion in Canola Oil. When onions are browned add package of Veggie crumbles and sauté together. If it seems a little bit dry you can add more Canola Oil. Add the Liquid Smoke to the mixture and stir – salt and pepper to taste and set aside.

Cook Veggie bacon in skillet – crumble up into veggie bacon bits – set aside.

Spray a large flat skillet with non-stick spray – heat for slow cook. Slowly pour one cup of Egg Beaters into skillet. Cook until approximately 1/2 cooked. Sprinkle veggie crumbles and bacon bits onto eggs until covered. Start from one end rolling omelet over itself until it’s completely closed.

Remove from skillet onto microwave safe plate. Sprinkle grated soy cheese on top of omelet and microwave for approximately 30 seconds or until cheese is melted. Salt and pepper to taste.

Makes approximately 4 to 5 omelets.
