Hello Again Friday and Hello Again Friends and Family!!!

I Pray Your Day Is Off To A Fabulous Start!!!! Anyone have big plans for this weekend? Please pray for my son’s ankle, as he has been in a lot of pain…he’s a basketball player for those of you who don’t know and he’s been pushing it wayyyyy tooooo hard and needs to rest it to heal!!! Pray that he will use wisdom. He’s almost 16 and sometimes wisdom doesn’t always come with that age (Sometimes wisdom doesn’t come with any age! LOL). Let us all use wisdom in our daily walk and watch what we say and how we act, because people are watching, really!!!!

Love your hot wings? Here’s a casserole you’ll love too. This one is by no means a diet dish, but it is quite tasty and you can whittle down the calories by using lower calorie dressing and taking it a little easier on the bacon…this one will be a big hit with your family and probably a favorite you’ll have over and over again!!! Ok, Let’s Go Have Some Fun In The Kitchen, But Make It Quick, Because You’ve Got Some Life To Live!!!!

Hot Wing Chicken Casserole

Ingredients:
1 rotisserie chicken
4 medium potatoes, cubed
1/2 cup olive oil
1 teaspoon salt
1 teaspoon pepper
1 Tablespoon paprika
1 Tablespoon garlic powder
1 cup onion, diced
4 Tablespoons hot sauce (if you want it hotter, add more)
1 cup ranch dressing
2 Tablespoons of dry ranch dressing
1 1/2 cup shredded cheddar cheese
1 pound bacon (cooked and crumbled)

Directions:
• Heat oven to 450 degrees. Combine olive oil, salt, pepper, paprika, garlic powder, onions and hot sauce together in a medium bowl. Add shredded chicken to mixture and set aside to let it have time to marinate.
• Place potato cubes in a gallon ziploc bag with a tablespoon of olive oil and 2 tablespoons of dry ranch dressing. Shake bag until potatoes are completely covered with the mixture. Transfer the potatoes to a 9×13 baking pan. Roast the potatoes for 20 to 30 minutes. Until golden brown and cooked through. Turn down your oven to 350 degrees.
• When the potatoes are done, remove from the oven and top with the shredded chicken and the shredded cheese. Sprinkle the bacon and drizzle the ranch dressing on top.
• Place in the oven and bake for another 20 to 30 minutes. The chicken should be heated through and the cheese should be melted.
**Note: If you love blue cheese with your wings, substitute the ranch for blue cheese dressing! Your Family will love this and it will become one of your favorites!
